Whole Wheat, Banana And Honey Cake (Eggless)

I had been craving for cake for almost a week and kept putting it off because of all the calories! Also I had only one banana and no eggs in the house so was looking up recipes and I found this gem.

I have scaled down the recipe to half because there was only one banana.

Ingredients:
1/2 cup whole wheat flour
1/4 cup milk
1/4 cup honey
2 tablespoon oil
1 over ripe banana
1/2 tea spoon vanilla extract
1/2 tea spoon baking soda

You can add walnuts or almonds to the cake batter as well.

Preheat oven 180 degree Celsius for 10 minutes.

Sift flour and soda. Mash the banana well so that there are no lumps.

Mix the wet ingredients (milk, honey, oil, vanilla extract) with the mashed banana. Add the flour and baking soda mixture to it.

Grease a pan with oil and dust it with flour. Put the cake batter into it. (Cake batter was very thick, not really pourable.)

Bake for 20 mins. at 180 degree Celsius. ( Baking time in original recipe is 30 – 40 mins. but since the mixture was half it took 20 mins.)

The cake consistency will be moist.

Here it is, finally! The Pigment Tutorial!

For our purposes, pigment is a dry coloring material that can change the color or texture or a nail polish. Some pigment is loose, and some is pressed (think loose eyeshadow vs. the kind in the compact.) Pigment can make a drastic change in the color of a nail polish.

First, some pigments:

TKB Trading Yellow 5, MAC, Fyrinnae. Pigments come in jars, tubes, and plastic bags. I really recommend putting them in screw-top jars or shakers like spices come in. Mineral makeup is not the same as pigment but sometimes produces good results but generally doesn’t pack enough color opacity to be really fantastic. More on that later.

Pressed eyeshadows can also be a good source of pigment. Creams are out- only powder will work, and the drier the texture, the better. They don’t have to be expensive, but do watch out…

Baking Experiment : Chocolate And Peanut Butter Cookies

I originally intended to make some peanut butter cookies, the reason, it had only three ingredients! So off I went gather the stuff and made the cookies but they turned out to be very dry.

Off I went (again) googling and found some recipes that could transform the cookies to a chocolatey delight, this time I needed loads of stuff. Thankfully I had everything at home.

I used two recipes :

3 ingredient Peanut Butter cookies

Chocolate and Peanut Butter cookies

My ingredient list looked something like this :

I feel like giving an advisory warning ..don’t try this unless you have made some cookies before rather refer to some professional recipe.

8 tbsp (1/2 cup) All purpose flour
16 tbsp (1 cup) Sugar
8 tbsp (1/2 cup) Unsalted butter
8 tbsp (1/2 cup) Cocoa powder
16 tbsp (1 cup) Creamy peanut butter ( I used the one by the brand, FunFoods)
1 Egg
1 tsp Baking powder
Some Chocolate shavings
2 tsp Vanilla essence
2 tbsp Milk

Beat the egg, mixed all the ingredients to make a dough.The dough was solid like a play doh, only more oily. I rolled the dough into small balls and flattened it with a fork on the cookies tray (on the parchment paper).

Preheated the oven for 10 mins at 170 C.

The recipe suggests that we bake it for 170 C for 28 minutes but I had to go for 25 mins in my oven. Let it cool down on a wire rack for 15 – 20 minutes. Cookies are ready to be devoured 🙂

Cupcakes with Pink Frosting

So pretty, I can stop looking! I almost did not want to eat it!

I have always looked at the beautiful frosted cupcakes in Pinterest and wondered if I could ever come close to making something like that. Soft pastels in pink, blue, yellow and mint greens.

I am so happy that I managed to make these.  I cheated a bit and got the icing from a local bakery. So next step would be to make my the frosting all by myself.

The recipe I used was this. One small change would be to reduce the sugar content.

I cannot wait to try all the other fillings and toppings ideas with this simple recipe!
